It’s still cold and frozen here in the Western Wisconsin (and, mind you, I enjoy that very much), but pretty soon the maple will be running, the taps will be dripping, the buckets will be overflowing with sweet sap, and the delicate, sweet smell of boiling maple syrup will fill the air.

OK, we don’t actually boil our syrup here at Compostella farm, but we tap a couple of trees for drinking, and use local maple syrup extensively in recipes. It’s the matter of regional pride.

Because I love all things maple, I’d like to direct you to a few useful posts on maple-tapping, sugaring-off, and cooking with maple syrup – like delicious maple butter, Azerbaijani baklava with a Wisconsin twist, snow taffy, and more!

1. If you have sugar maples in your area, consider tapping them this year to gather and drink the delicious, nutritious, subtly-sweet maple sap. My kids love it, and it makes for a wonderful seasonal activity and tradition.

This is what the sap looks like.

2. Make some syrup! Here’s how:

3. Maple Butter!

An utterly delectable spread that’s great on bread and baked goods. Seriously, you owe it to yourself to try it!

4. Sugar-on-Snow (a.k.a. Maple Snow Taffy)

Quick, make some before the winter’s over! Your kids will think you are the coolest mom (or dad) ever.

Works for me.

5. Maple Creme Brulee!

A classy company dessert, and a good recipe for the crunchy.

6.  Azerbaijani Baklava with Maple Syrup

Made with thick, hand-rolled pastry rather than store-bought phyllo, this one is a special treat.

Why yes, I am a hand-rolled pastry tyrant. Homemade puff pastry, for instance? It’s easier than you think! Saves money, too.

7. Maple-Glazed Roast Chicken with Caramelized Onions

Yum and Yum!

Do you have your own favorite things to do with maple syrup? By all means, share!

If you are looking for a quick’n'easy last-minute Valentine’s dessert idea, this one is for you! I threw these together yesterday as a bit of a trial run for tonight’s Valetine’s dinner with company, and I thought they were just terrific – goey, chocolatey, a little crispy on the outside, and extremely quick and easy to prepare.

Here’s the printable recipe:

Petunia’s Chocolate Funfetti Cupcakes

My soon-to-be first-grader (hold me!) is six-and-a-half, and is currently at the age of trying to find and assert areas of autonomy, often expressed by insisting on doing certain things “all by myself.” One of these areas happens to be cooking and baking. Although she has made batches of bread dough, rolled out other doughs, [...]

GGGB’s Quick and Easy (From-Scratch) Treats

August 1, 2012
_DSC0118

I love to cook and eat, but I don’t like anything too involved, multi-step, or complicated. How about you? Here are my reasons: – life’s too short – there are too many good TV shows to watch – nobody likes to wait, especially not kids – steps are bourgeois – great results with minimal effort [...]

Raspberry Ice-Cream

July 22, 2012
_DSC0003

I recently learned how to make ice-cream. It’s really good – so much better than bougten, in my opinion. And making my own helps my kids learn patience – none of this buy-it-on-a-whim-from-a-grocery-store nonsense. No, sir! If you want ice-cream, you have to wait until it’s made. This is what I love the most about [...]

Café Glacé, or Russian Coffee Float

July 17, 2012
_DSC0281

It’s been incredibly hot out there, which meant two things: 1) Working in the kitchen has been challenging. 2) There was a great need for cooling treats and beverages. With that in mind, I decided to re-post this Russian concoction from my archives – it is perfect for this weather. Despite its French name, this [...]

This delicious homemade ice-cream couldn’t be simpler as it involves no eggs custard, cooking, or chilling – perfect for a mom of three and spur-of-the-moment cook like myself. Made with nothing more than heavy cream, sugar, and a generous amount of vanilla, it is still rich, creamy, and delicious. Give it a try and watch [...]

Homemade Rose Syrup, Rose Jam, and Rose Drink Concentrate

June 26, 2012
_DSC0341

Homemade rose syrup, how about that? Rose, or “golden flower” in Azerbaijani, is traditionally used as flavoring and jam material in both my native Azerbaijan and the surrounding countries, and both rose water and rose syrup can be purchased from Middle-Eastern ethnic grocers. Being the kind of snob person that I am, I made a [...]
