I NEED to give that hollandaise recipe a try. I have never had really good luck getting hollandaise to come together right in a pan. If that works, my wife may ask to marry you.

This works for me every time (it’s important to stick to the proportions and to pour the butter in slowly). I made the pan stuff once as well – not nearly as good/smooth/reliable/easy in my case. This has proved to be ftw. Let me know if you like it!
