Chicken-Ramp Salad

Because you really needed me to show you how to make chicken salad:

Some cooked chicken (I only used dark meat in this case)…

Some chopped celery…

Throw in some ramps… You can always add some walnut chunks, and a chopped apple, too.

Now for the dressing (I got this from my friend Jennifer – thank you, Jen!): some mayo…

Some yogurt and stone-ground mustard…

Some black pepper (no salt – there’s plenty of salt in the mayo and the mustard)…

Mix it all together, and there you go!

Jen likes to serve hers with a slice of cheese and a slice of tomato. Delicious! But it’s not the season for tomatoes.

Note: This was an experiment, and I found that ramp greens are too tough for this, so I would suggest to use the red-and-white parts only, reserving the greens for pesto or some other use.

Hi Sofya! I just wanted to leave you a note to tell you that I think your blog is great! I recently got the St. Brigid’s Meadows newsletter and found a link to you there. We are near LaCrosse now, but I have family on the ridge and that is also where my heart is. ;) And I really love going to Viroqua for the market and all of the local, organic everything.
